Yogurt Yumsicles are not only yummy, but nutritious too!
Yogurt Yumsicles
1 to 2 cups plain low fat yogurt
1 cup unsweetened fruit juice or 6 ounces frozen concentrate, thawed (orange, apple, grape or pineapple)
1 tsp. vanilla
1 Tbsp. honey, sugar or sugar substitute
Optional
1 ripe banana
10-12 strawberries
1 Tbsp. (envelope) unflavored gelatin
¼ to ½ cup cold water.
Begin by blending the yogurt, juice, vanilla, honey, and set aside. If using whole fruit, puree the fruit until a smooth consistency is reached and add to the yogurt mixture. Soften the gelatin in water and heat to dissolve slightly and add to the yogurt mixture and mix. Pour the mixture into small paper cups and place in the freezer. Place plastic spoons or popsicle sticks in the mixture when partially frozen. Continue to freeze until firm and serve.
